JMB Street Corn Fritters

Ingredients

Ingredients for Fritters:

  • 3 cups JMB Sweet Corn Kernels 4 ears of corn
  • ½ cup all-purpose flour
  • 2 tablespoons chopped cilantro
  • 1 teaspoon coarse kosher salt
  • 1 teaspoon black pepper
  • 2 large eggs beaten
  • 2 tablespoons vegetable oil
  • ¼ cup cotija cheese
  • 1 teaspoon red chili powder

Ingredients for dipping sauce:

  • 3 tablespoons mayo
  • 1 tablespoon Tapatío
  • 1 teaspoon lime juice

Instructions

  • In a medium bowl, mix corn, flour, cotija cheese, chili powder, cilantro, salt, and pepper until well combined.
  • Mix in beaten eggs.
  • In a small bowl, mix together ingredients for dipping sauce and set aside.
  • Heat oil in a large skillet over medium-high heat.
  • Drop in about ¼ cup of corn mixture for each fritter in the pan.
  • Cook the fritters until golden brown, about 2 minutes.
  • Flip the fritters and cook for another 2 minutes, or until golden brown.
  • Serve with dipping sauce.
