JMB Asparagus and Shrimp Pasta

Ingredients

  • 1 ½ cup pasta spiral or penne
  • 1 lb asparagus rinsed and trimmed to 2” pieces
  • 2 Tbsp butter
  • 1 Tbsp flour
  • 4 cloves of garlic minced
  • 1 lb large shrimp peeled and deveined
  • 1 cup dry white wine
  • ½ tsp dry basil
  • Juice from one lemon
  • Salt and pepper to taste
  • Parsley to garnish optional

Instructions

  • In a medium saucepan boil water and cook pasta to instructions.
  • Rinse and trim fresh asparagus, set aside.
  • Rinse uncooked shrimp, peel and devein if needed and set aside.
  • In a pan on medium heat add butter and garlic.
  • Once butter is melted mix in flour to make a roux. Add white wine, lemon juice, shrimp, asparagus and seasonings.
  • Cook until shrimp is fully cooked and asparagus is tender.
  • Add in cooked pasta and toss until mixed well.
  • Garnish with fresh parsley if desired.
