JMB Asparagus and Shrimp Pasta
Ingredients
- 1 ½ cup pasta spiral or penne
- 1 lb asparagus rinsed and trimmed to 2” pieces
- 2 Tbsp butter
- 1 Tbsp flour
- 4 cloves of garlic minced
- 1 lb large shrimp peeled and deveined
- 1 cup dry white wine
- ½ tsp dry basil
- Juice from one lemon
- Salt and pepper to taste
- Parsley to garnish optional
Instructions
- In a medium saucepan boil water and cook pasta to instructions.
- Rinse and trim fresh asparagus, set aside.
- Rinse uncooked shrimp, peel and devein if needed and set aside.
- In a pan on medium heat add butter and garlic.
- Once butter is melted mix in flour to make a roux. Add white wine, lemon juice, shrimp, asparagus and seasonings.
- Cook until shrimp is fully cooked and asparagus is tender.
- Add in cooked pasta and toss until mixed well.
- Garnish with fresh parsley if desired.
