JMB Street Corn Fritters
Ingredients
Ingredients for Fritters:
- 3 cups JMB Sweet Corn Kernels 4 ears of corn
- ½ cup all-purpose flour
- 2 tablespoons chopped cilantro
- 1 teaspoon coarse kosher salt
- 1 teaspoon black pepper
- 2 large eggs beaten
- 2 tablespoons vegetable oil
- ¼ cup cotija cheese
- 1 teaspoon red chili powder
Ingredients for dipping sauce:
- 3 tablespoons mayo
- 1 tablespoon Tapatío
- 1 teaspoon lime juice
Instructions
- In a medium bowl, mix corn, flour, cotija cheese, chili powder, cilantro, salt, and pepper until well combined.
- Mix in beaten eggs.
- In a small bowl, mix together ingredients for dipping sauce and set aside.
- Heat oil in a large skillet over medium-high heat.
- Drop in about ¼ cup of corn mixture for each fritter in the pan.
- Cook the fritters until golden brown, about 2 minutes.
- Flip the fritters and cook for another 2 minutes, or until golden brown.
- Serve with dipping sauce.
